Water Kefir is packed full of pro-biotic enzymes that your gut requires for a healthy biome. Gut health impacts the body in so many ways – water kefir is a balanced and nutritious food, and contributes to a healthy immune system. Water kefir is a probiotic drink which is the bi product made by feeding the culture (Water kefir grains).
What are Water Kefir grains?
Kefir is a symbiotic culture of bacteria and yeast, they resemble grains only in appearance. They do not contain any wheat, gluten or any other grain. They actually look more like a gelatinous blob.
The kefir grains metabolize the sugars from the feed leaving only about 5% sugar remaining. The pro-biotic enzymes are produced as a by-product of this metabolism process.
Water kefir grains are a naturally occurring culture that cannot be made artificially. All grains are multiplied and passed on from the original mother culture. It is thought they first formed on the pads of a Mexican cactus as hard granules which were reconstituted in sugar water.
Water Kefir can easily be made at home and using seasonal fruits and herbs you can produce some delicious drinks. It is hard to choose a favourite. I like the fruity flavour of currants, I also enjoy the ginger which is reminiscent of the old style ginger beer, I enjoyed as a child. My children like the Lemon Verbena or Raspberry.
